Caramel Mudcake

Sweet, with a Toffee twist, this scrumptious Caramel Mudcake pairs perfectly with Vanilla Buttercream or White Chocolate Ganache.

Servings 2 6×3 Cakes

Ingredients
  

  • 1 cup Self Raising Flour
  • 1 cup Plain Flour All Purpose
  • 1 1/2 cup White Sugar
  • 3 Eggs
  • 1 1/2 cup Milk
  • 2 tbsp Butter or Margarine softened
  • 2 tsp Vanilla Essence/flavour
  • 200 g White Chocolate, Melted with oil**
  • 1/3 cup Olive Oil (for heating with Chocolate) for melting with chocolate
  • 2 tsp Caramel/Butterscotch Flavour (optional)

Instructions
 

  • Preheat your oven to 150℃ (300℉) for Conventional Ovens. Fan forced and convection oven heats may vary. Line or grease and flour 2 6"x3" cake tins.
  • Combine White Chocolate and oil, and melt slowly either in the microwave, or over a double boiler.
  • Add dry ingredients to your mixer bowl, and mix through, to avoid sugar clumps.
  • Add Eggs, milk, butter, and flavours, and mix on medium speed until combined.
  • On low speed, slowly add chocolate mixture, and then mix on medium until combined.
  • Bake for about 1 1/2 hours. The key with mudcakes is to bake them at a low temperature so they don’t rise, and to keep that delicious fudgy texture, so adjust as necessary.

Notes

**Important note about baking cakes with White Chocolate** White Chocolate is notorious for creating ‘sinkholes’ in cakes, especially if they are baked too hot too quick. To avoid this, bake your cake on a low temperature (as above), and avoid filling a tin above 3 inches.
Mudcakes last REALLY well. This cake will keep well wrapped/air tight, for at least a week in or out of the fridge. If you have PERISHABLE fillings, you MUST store your cakes in the fridge.Basic Buttercream lasts as well as Mudcake, so you could easily make your cake on the Monday, and store it airtight in the fridge for Saturday. I say airtight, because while it won’t spoil quickly, its still cake, so it WILL dry out given the chance!

    Can I ask why you use the 2 different flours in your recipe? Also, is it softened butter or do you melt it when adding it to the dry ingredients?

      Plain flour has no levener added, so it doesn’t rise, which in concert with Self Raising Flour, gives enough life to avoid the cake turning out gluey, but without it being too ‘spongy’ either.

    Hi Kerrie! Are these measurements in Aussie cups? Do you by any chance have this recipe listed in grams anywhere? I’m in the U.S. And I think our cup measures are different from yours. Thanks!

    Help!🤤I’m needing to make a cake w buttercream frosting but additionally with chocolate ganache poured on top & dripped down the sides, as the one looks in your Carmel mudcake picture.How do I put the choc. ganache on top & down sides without melting the buttercream frosting? THANK YOU for your help!!!🤗-Shelly

      Hi Shelly! I don’t actually make ganache for drip, I use chocolate thinned with olive oil! It doesn’t set completely hard, so its easier to cut, and its not hot, so you can use it on buttercream straight away.

I know I’m rubbish at posting updates nowadays, I know I’m rubbish at posting updates nowadays, but look! Our first official harvest! ❤️🌱
We harvested 3 itty bitty potatoes (which were DELICIOUS), as well as some tender Kale, spinach, sage, basil and a little thyme.
It’s little, but we are so proud, and next year will be EPIC 🙌🏻
Also made some Anzac biscuits and some triple Chocolate cookies, because reasons 🍪 #homegarden #veggiegarden #cookies

The plastic seems to have saved the seedlings from drowning, as you can see from the photo, this is what the garden bed would have looked like if I hadn’t covered them. 
My potatoes didn’t fair as well. I couldn’t safely cover them, the plants are yellow (not a good sign) but fingers crossed as they are dude for harvest next week 🤞🏻

My state, and and local area in particular, has been smashed AGAIN by epic levels of rain (160mm/6.3in) in 3 days, and there’s still more to come.
My veggie garden looks like Laura Palmer (whose old enough to get THAT reference?!) and my entire yard is leaf covered mud, but we are blessed beyond measure to be on higher ground and will see no flooding.
My heart is broken, again, for the locals that have lost their homes, possessions, and livelihoods, and coming on the back of Covid too, it’s too much. 
Please stay safe out there, never drive through rising water, and please evacuate if given the direction. This too shall (hopefully) pass 💔🌧 #sydneyrain
